The proprietary Benelact® process offered by Alliance Enterprises of SE Wisconsin, LLC has achieved a new standard: reducing the cholesterol in cheddar cheese by 45 percent.
In recent product testing, Sturtevant, Wis.-based Alliance Enterprises’ research and development team, in collaboration with Cedar Grove Cheese of Plain, Wis., was able to boost the amount of cholesterol reduction from that attained in earlier testing. Before April 2009, Benelact removed just 25 percent of cholesterol from cheese.
An all‐natural process, Benelact removes cholesterol from dairy products without changing the original taste and texture. Nutritional content remains the same, as well as the shelf life of the items. Introduced in 2007, the exclusive process enables food makers to offer additional options while meeting consumer demand for healthier fare.
