'Food Theatre' at Heart of New Lunds/Byerly's Concept

Edina, Minn.-based Lund Food Holdings Inc. is gearing up for the grand opening of a new concept called Lunds and Byerly’s Kitchen, set to open March 6 in the Minneapolis suburb of Wayzata.
 
Lund's announcement comes on the heels of the news that West Des Moines, Iowa-based Hy-Vee plans to enter the Twin Cities market, with four to six new stores in the next several years. While Lunds/Byerly's and Hy-Vee offer different styles of food retailing, both companies' moves in the Twin Cities market will certainly be worth watching.
 
The 17,000-square-foot Lunds and Byerly’s Kitchen will focus extensively on freshly prepared offerings for dine-in and take-out, according to the company. The space will feature everything from made-to-order sandwiches, sushi and a hot food bar to heat-and-serve entrées, a salad bar and a charcuterie featuring cut-to-order Italian meats, including sausages, salamis and pâtés.
 
Food theatre will be a key component at Lunds and Byerly's Kitchen. The store's chef-driven dining experience will include menu offerings such as burgers, stone-oven pizzas, seasonal entrées and weekly meat and seafood flights. There will also be many kid-friendly meals available. A wine and beer bar will feature an impressive selection of hyper-local craft beers on tap and wines from around the world. Customers can browse the menu, place their order and pay via iPads located at each table.
 
“We are committed to continuously pushing the envelope for food innovation,” said Tres Lund, CEO of Lund Food Holdings. “Lunds and Byerly’s Kitchen is the next evolution of our food-service offerings.”
 
The new concept will also have a tailored selection of produce, groceries and specialty products, including an assortment of gift baskets and an expansive spice collection with nearly 200 spices.
 
Additional offerings include artisan breads, a specialty cheese counter, olive and antipasti bar and Caribou Coffee.
 
Shoppers seeking Lunds and Byerly’s full product selection can shop online using the iPads in the dining area or by visiting LundsandByerlys.com/ShopOnline. Their orders can be delivered to Lunds and Byerly’s Kitchen, where they will be available for pick-up in assigned lockers.
 
There is also a community room available to the public at no charge. Free covered parking is available in the adjacent parking ramp.
 
A full-service Lunds grocery store located a short distance from the new store will remain open, according to the company.
 
Celebrating its 75th anniversary this year, Lund Food Holdings operates 12 Lunds and 11 Byerly’s grocery stores in the Twin Cities market and surrounding area. Another Lunds is scheduled to open on May 15 in downtown St. Paul.
