IPC Unveils Recipe Resource Center

In an effort to alleviate the stress of at-home meal preparation, the Idaho Potato Commission (IPC) has called in a few of the pros – including food bloggers Sara O’Donnell of “Average Betty” and Nicole Presley of “Presley’s Pantry” – to create a comprehensive recipe resource center for home chefs.

“In Idaho, potatoes aren’t just a side dish, they’re the centerpiece of the meal. And, we have a sneaking suspicion that many folks around the country feel that same way,” said Frank Muir, president & CEO of Eagle, Idaho-based IPC. “This holiday season, whether you’re preparing classic mashed potatoes or another family favorite, make sure to look for the well-recognized ‘Grown in Idaho’ seal when shopping.”

Just in time for the holiday season, O’Donnell and Presley have debuted a new video, entitled “Mashed Potato Party!,” demonstrating three ways to prepare and enjoy mashed potatoes. The video features Russets, Yukon Golds and Klondike Roses potato varieties, and is available online.

Additionally, in tribute to the late Art Ginsburg, the IPC has collaborated with the Mr. Food Test Kitchen team to assemble a “Holiday Side Dish Guide,” featuring a variety of recipes that home cooks can include in their festive spreads. Highlights include Lyonnaise Potatoes, a simple-to-prepare dish that cooks up in a skillet, as well as Cheddar Potato Patties, a tasty side dish for a holiday potluck.

The Idaho Potato Commission is responsible for promoting and protecting the “Grown in Idaho” seal, a federally registered trademark that assures consumers they are purchasing genuine, top-quality Idaho potatoes. A full collection of Idaho mashed potato recipes and side dishes are available online.
