WPVGA Chooses ‘Breakfast of Champions’ Champion

The Wisconsin Potato and Vegetable Growers Association (WPVGA) has unveiled the winners of its “Breakfast of Champions” recipe contest, an effort launched earlier this year to grow consumer awareness around the benefits of nutrient-rich Wisconsin potatoes.

“We had a record number of submissions from a very talented group of individuals,” said Dana Rady, director of promotion, communication and consumer education at the Antigo-based WPVGA. “All of the submissions were very unique and creative. The up side of this is that we now have a robust database of breakfast recipes for consumers to choose from.”

The Breakfast of Champions winning recipes are as follows:

Champion RecipeMediterranean Crispy Potato Breakfast Roulade. Created by Crystal Schmidt of Altoona, Wis., this first place recipe puts a creative spin on the traditional roulade — placing consumers’ favorite breakfast proteins on the inside and wrapping them in a delicate, flavorful sheet of thinly sliced Wisconsin Russet potatoes.

Second Place RecipeMexican Fiesta Tater Breakfast Popovers. Created by Alice D’Antoni Phillips of Murrells Inlet, S.C., these breakfast popovers are a delightful mix of eggs, peppers, avocados, cheese and Wisconsin potatoes with a hint of lime, cumin and hot sauce. Shredded greens and sour cream are the perfect sides.

Third Place RecipeRustic Baked Breakfast Boats. This winning recipe was submitted by Cathi Iannone of Thorton, Colo. A delightful play on the typical baked potato, these Breakfast Boats nestle an egg in a delicious bed of Wisconsin potatoes, prosciutto or pancetta, Gorgonzola and Parmigiano Reggiano cheeses, cherry tomatoes and chives.

The Breakfast of Champions Champion, Crystal Schmidt, was awarded a $400 gift card from Williams-Sonoma. The second and third place winners earned $150 and $100 gift cards, respectively, to their favorite grocery store. Linda Bonwill of Englewood, Fla., was the randomly drawn winner of a $100 gift card from Williams-Sonoma.

The WPVGA will provide grocers with free downloadable recipe tearpads of the Breakfast of Champions Champion recipe in mid-February.

The WPVGA is a non-profit organization that represents and promotes potato and vegetable growers across Wisconsin. It currently serves more than 300 members and affiliates.
