The Professional Pasta Station from Fort Lauderdale, Fla.-based Electrolux is a fully automated system designed to give chefs total control of the cooking process so they can offer high-quality food and taste.
Each modular unit contains preparation and cooking areas for both pasta and sauces, and has several preparation options for cooking flexibility, including automatic pasta cookers, worktops, electric ranges, bain-maries, storage cupboards, mobile pasta freezers, blast-chillers and ovens. Depending on the type of pasta, users can serve up to 200 prepared pasta dishes every hour.
The Pasta Station has four automatic and programmable lowering/lifting baskets, each with independent movement and timers, allowing the chef to prepare four kinds of pasta and four sauces. To keep pasta firm, a built-in thermostat and pre-heating system maintains a constant water temperature during the entire cooking process and avoids overcooking, according to Electrolux. In addition, the units automatically perform starch removal and water refill.
